I love baking this bread for get together’s with friends. It also goes fabulously well with hot tea. Enjoy!

2.5 c quinoa
1 1/3 c no sugar applesauce
1/2 c Smart Balance butter
1 c Splenda
3 cage-free eggs
3 small zucchini, grated
2t baking soda
1/2 t vanilla extract
1/2 t salt
1 T cinnamon

Preheat oven to 350F. Cream butter and sugar. Beat eggs in, one at a time. Stir in applesauce, zucchini and vanilla. In separate bowl, stir in remaining dry ingredients. Add dry mixture to wet, and stir until completely combined. Bake at 350 for 50-60 minutes. Cool for 10 minutes.
